I'll exclude Slayers and Ranma 1/2 songs cause I would be here forever if I did that :)

Favorite Opening: Mad Machine from the second Bubblegum Crisis OVA

Oh man, Mad Machine is one of my favorites from BGC (along with Konya wa Hurricane). SO GOOD.

I used to hear the Omelet song at least once at every anime convention. It's so catchy and fun! X3

I've been waiting until I had some free time to devote to this thread, since I have many favorites!

OPs:

Tenchi Muyo Ryo-Ohki
I love this song, it's so weird and mysterious. This opening is classy and subtle and not overdone. I also like some other Tenchi Muyo openings, like Pioneer (although the animation for that one kinda sucks, the song is great) and Dream Away.

Macross 2: Hush of a Million Years
This might be more nostalgia than anything. Macross 2 coming out may as well have been the return of God as far as I was concerned. Little did I know back then that it would be relegated to non-canon status after Macross Plus and Macross 7 came out. Still a cool song with cool animation.

Anything from Robot Anime History 1984-1984 is awesome - seriously, watch the whole damn thing (maybe skip God Mazinger). Awesome songs with great animation.

I also like all the American intros mentioned in my post here.

EDs:

Lodoss Wars: Fantasia of the Wind
Amazing song. Has hints of What a Feeling from the FlashDance movie. Features what sounds like traditional Japanese instruments (at least to my gaijin ears). Also look at those bad-ass fantasy stills! Unicorns and Dragons, oh my! I always wondered why everyone loves Adèsso e Fortuna when this song is so much cooler.

Macross 7 : My Friends
Rocking song, but also really pretty. Love it. Also beautiful artwork by Haruhiko Mikimoto. What's not to like?

Tenchi Muyo: Talent for Love
I feel seriously heavy nostalgia when I watch this. Tenchi Muyo was the second anime I fell in love with after Robotech. The song is fun and catchy and the animation is pretty cute. Gotta love that little cabbit!

BONUS:

I love Full Moon Light from Devil Hunter Yohko. It was like a bonus music video, not an OP or ED. The song is sickeningly sweet and super poppy.

Oh yeah, I've only seen a few episodes of Fullmetal Alchemist, but the first ED is just excellent. You rarely hear modern-era anime music that good.

I actually like the acoustic version of that song better than the original: http://www.youtube.com/watch?v=yuuGTuohfdg (it feels more emotional in this version I think) though I do like the original song as well.

FMA generally has pretty good music. I liked the song they used for the first opening of "Brotherhood," too: http://www.youtube.com/watch?v=GelAE_63FWc "Again" by Yui. (Sorry it's the music video version, every time I looked up the actual OP version, all I found were videos of kids trying to sing their own version of it for some reason. x__X)

Thanks for the link to the acoustic version, I didn't know about that.

Yuck! That is the worst.

Also, it almost sounds like you didn't see my main post right above the FMA one. Just saying in case you missed it...

oh gosh, I LOVE "Talent for love"...one of my favorite old Tenchi songs <3

Even though I didn't really like Shin Tenchi Muyo as much, I did love the ending theme: http://www.youtube.com/watch?v=-2STBHByslE

I LOVE this song, altho I simply CANNOT listen to it without picturing badly animated, semi-off-timed lip syncing for Mylene. It just ALWAYS gets in my head.

Agree on the nostalgia factor for this. Just commenting reminds me of when Pioneer FIRST released the cabbit plushie in the US and it was a very hard to find item for a little while.
